The “couteau du Vendredi”, “friday knife”, a shape originaly made by Henri Viallon (who died in 2021).
To him, it was the perfect fellow for week-end’s meals. Raphaël Durand, who has been learning cutlery with Henri,
decided to honor him by interpreting this knife.
